NUFM students acquired nutrition knowledge such as balanced diet, functional food, weight control and disease prevention in the course lectures. To supplement with industrial need, a guest talk was organized and Ms. Karen Lau, a Registered Dietitian (USA) who is also a Certified Diabetes Educator, was invited as the speaker.

Karen shared the duties and the roles of a Registered Dietitian in her workplace, Joslin Diabetes Center, which is affiliated with Harvard Medical School. Karen led our students to examine the global view on health issues such as the comparison of diabetes rate for different ethnic groups, and the proposed reasons for type II diabetes. She illustrated some interesting findings from her research team and she raised out some loopholes in traditional health beliefs.  Karen also shared her valuable clinical experience and some tips in giving advices and guidelines to patients and the general public. Students gained hand-on experience in adopting health eating principles and how to be a healthy eating ambassador.
